Ever Have One of Those Days

Monday.  It was true to its word.  It wasn't one of my better days.  The only good thing about today was our Monday night WW meeting at 5:30 in Concord.  We had a great turnout.  Five new enrollments!  Now if they had been reading this blog, and mentioned it, they would have received a free gift.

I must admit that I am a bit unmotivated right now.  It is so tough trying to cook and eat healthy when you are the only member in the household who wants to participate.  My Oscar Night menu was consumed only by me.  A Turkey/Chicken "meatloaf" all ten servings for me.  Even the No bake cheesecake...

It hurts my feelings, making all this food just for me.  Oh well.  Unfortunately, I can't even muster up enough energy to find a great recipe to post for everyone tonight.  So I am taking recipe ideas from anyone who would like to send one to me.

  1. I know what it's like to cook and have no one eat. It makes me really mad, like I just wasted my time and effort, grrrrrr. Especially when we're looking out for their benefit with good healthy food. But chin up my friend - while you may not have fed anyone in your house on Sunday, you continue to feed all of us, your blog followers, daily with your tips, ideas, and yummy recipes. I look forward to it every day. Know what?!

  3. Hey there Marlene. I really am enjoying your posts. I know this is late, but here is a simple recipe one can dress up as one wants:
    3 lb butternut squash, cubed. (I didn't know you could just use a vegetable peeler on this until this recipe. I did cut it in chunks for better handling.
    2-3 leeks coarsly chopped
    3 cups water (I subsituted veggie broth)
    3 cups milk (didn't have enough milk and since I live too 15 min from grocery - one way, I used Almond milk)

    Cook all together until squash is mush, than pureee. I sprinkled powered ginger once, and nutmeg another time as add ons when I ate. And only some salt and pepper as needed. Flavor was good.
