I really am enjoying your post...Hey there Marlene. I really am enjoying your posts. I know this is late, but here is a simple recipe one can dress up as one wants:<br />3 lb butternut squash, cubed. (I didn't know you could just use a vegetable peeler on this until this recipe. I did cut it in chunks for better handling.<br />2-3 leeks coarsly chopped<br />3 cups water (I subsituted veggie broth)<br />3 cups milk (didn't have enough milk and since I live too 15 min from grocery - one way, I used Almond milk)<br /><br />Cook all together until squash is mush, than pureee. I sprinkled powered ginger once, and nutmeg another time as add ons when I ate. And only some salt and pepper as needed. It makes me really mad, like I just wasted my time and effort, grrrrrr. Especially when we're looking out for their benefit with good healthy food.
